I know that at least 3 pairs of alleles control eye color but since Brown is dominant over blue I have told my students that if both parents have blue eyes, it is impossible for them to have a brown eyed child.  I read that this is incorrect but I don't understand why.

It would be VERY unlikely. The only reason it may occur would be if there is a mutaion in one of the genes to produce a brown gene in one parent who has blue eyes. Brown is dominate over blue.
